BREAKFAST AND AFTERNOON TEA
In the warm-weather months, guests gather on the classic wraparound porch for afternoon refreshments (or to spend a few lazy hours snoozing in a rocking chair). During chillier weather, guests enjoy afternoon tea by the fireplace in the comfortable living room.
Here is our most-requested breakfast recipe:
1 cup flour 3/4 teaspoon baking soda dash salt 1 1/2 cup nonfat buttermilk |
3 tablespoons melted butter,
or vegetable oil 1 teaspoon vanilla extract 2 eggs separated 1/2 cup nonfat plain yogurt |
Combine dry ingredients.
Beat egg whites until stiff.
Combine egg yolks and yogurt, then blend in vanilla, milk
and butter (or oil). Combine this mixture with the dry
ingredients, then fold egg whites into the mix. This is a thin
mix, so don't worry about it not being very thick.
Cook at high heat (about 370 degrees) on a griddle, about 90
seconds per side.
Mixture makes about 16 six-inch pancakes.
